| Cottage Cheese Strudel Túrós Rétes How can I describe this heavenly dessert? Sweet cheese strudel - hand-pulled thin layers of crunchy, buttery strudel dough wrapped around lemon scented sweet curd cheese and plump golden raisins. Prepare Hungarian Strudel (from our cookbook) or purchased Phyllo Dough (Follow package directions) and fill with cottage cheese. Hint: – for flakey layers, use 4 buttered phyllo sheets per roll. Beat egg yolks, butter and sugar until thick and creamy. Add cheese and sour cream, raisins and lemon juice and rind. Set aside. Beat egg whites until stiff. Fold in egg whites. Spread over strudel and roll as you would for strudels. Bake at 425°F for 20-25 minutes. Hint: To make the filling creamier, press the cottage cheese through a potato ricer first – then combine with all other ingredients. |
