HUNGARIAN APPLE SOUP

Here’s another delightful tangy and creamy soup. HUNGARIAN APPLE SOUP- Alma Leves. I love this soup
in the fall, when I want to eat something really creamy.  Any apples will do, you just need to adjust the
sweetness. You will start a new trend with the kids – that’s certain.










Sauté together; apples, butter, sugar and cinnamon.  Add water and boil for 10 minutes.  Add
pinch salt. Prepare Cream Slurry (Habarás): place sour cream, flour and water in a bowl and whisk
until creamy. Remove apples from heat – stir in slurry and return to stove. Bring to a slow boil,
then remove from heat, let cool slightly and serve lukewarm.  This is a great first course to a rich
meaty meal.

4 cup apples, cubed
Slurry
4 tbsp butter
1 cup sour cream
½ tsp cinnamon
2 tbsp flour
2 tbsp sugar
¼ cup water
3 cups water
squeeze of lemon
pinch salt
 
APPLE CAKE
Almás Sütemény

This simple yet delicious Hungarian Apple Cake - Almás Sütemény was inspired by Mom’s friend Maria, a
very talented Hungarian Caterer in Michigan.  She prepared this cake for many weddings and other large
functions. We were amazed at how quickly she was able to whip this together.  Here’s a pared down and a
somewhat lighter version but equally as delightful. It gets rave reviews every time!








Peel, core and cut apples into small chunks. Drizzle with lemon juice so it won’t go brown while preparing rest
of ingredients. Sift flour with soda, salt and cinnamon. In a large mixing bowl, beat eggs and sugar.  Add oil.
Blend well. Add dry ingredients in thirds and do not over mix. Lastly, fold in walnuts, raisins and apples. Turn
into a 9”x12”x2” baking pan which has been lined with parchment paper. Bake at 350°F for 40 minutes. Let
cool slightly and cut into large squares. Dust with icing sugar. You will
NOT be able to just have one square –
guaranteed!
6 apples, assorted variety
1 tsp cinnamon
3 eggs
½ tsp salt
1 cup sugar
2 cups flour
1 cup oil
½ cup chopped walnuts
1½ tsp baking soda
1/2 cup white raisins
APPLE STRUDEL
Almás Rétes

Apple Strudel - Almás Rétes - is probably the most popular of the family of pastries. I don’t know of
anyone who has NOT had a slice of one variation or another. But then, you can’t go wrong with apples in
dessert. This recipe contains no doctoring with raisins or nuts – just plain and simple and deliciously tart
and juicy. Use various apples at once (golden delicious, granny smith, Courtney, Macintosh).










Prepare Hungarian Strudel dough above or purchased phyllo dough (Follow package directions) and fill
with recipe below. Hint: – for flakey layers, use 4 buttered phyllo sheets per roll.  Preheat oven to 375°F
and line baking sheet with parchment paper.

In a large bowl, combine all ingredients. Sprinkle bread crumbs, then spoon filling evenly across dough, roll,
brush with butter. Bake at 375°F for 30 minutes or until lightly golden. Let cool slightly then, cut on the
diagonal with a serrated knife to ensure clean cuts. Garnish: icing sugar.

Accompaniment: vanilla ice cream or lightly sweetened whipped cream!
Hint: to prevent apples from seeping their juices into dough, before placing filling on strudel – sprinkle ½
cup of bread crumbs on dough.

Other ingredients: If you like your apple strudel with raisins and nuts – go wild.
